HOW THE HOUSE WORKS

From cask to bottle

The journey is shared between sister companies. Gallow Hill Distillery Ltd (GHD) selects and purchases the mature Scotch whisky cask, owns the stock and places it in bonded warehousing, then manages the whisky through maturation, re-racking and bottling. GHD retains ownership until duty is paid, at which point ownership of the finished bottles transfers to House of Five Stills for onward customer-facing use.

THE CASK JOURNEY

Where the whisky changes direction

The exact route varies by project, but the principle remains consistent: select carefully, sample, make deliberate cask decisions, and bottle when the whisky is ready.

01

GHD selects & buys

Gallow Hill Distillery Ltd selects and purchases the mature Scotch whisky cask, taking ownership of the stock for the project until duty is paid and ownership transfers to House of Five Stills.

02

Into bonded warehouse

GHD places the cask with the specialist bonded-warehouse partner and remains responsible for stock ownership and the whisky while it is held under bond.

03

Sample

Assess the whisky before further maturation or finishing decisions are made.

04

Re-rack

Move selected whisky into the chosen finishing cask or casks where the project calls for a change in direction.

05

Taste & decide

Review development through sampling and decide when the balance of spirit and cask influence is right.

06

Approve for bottling

GHD confirms the final specification and moves the project into small-batch bottling, duty accounting and release preparation.

BOTTLING

Turning a cask project into a finished release

01

Final specification

Confirm the whisky, bottling strength, bottle format and release information.

02

Small-batch bottling

The whisky is prepared and bottled through specialist production partners suited to limited runs.

03

Labels & numbering

Apply the approved label and, where appropriate, the individual numbering or limited-release detail.

04

Duty paid & transferred

Once bottling and duty requirements are complete, ownership of the finished bottles transfers from Gallow Hill Distillery Ltd to House of Five Stills duty paid, ready for onward customer-facing use.
